    • 2 salmon fillets

    • 1 zucchini, sliced

    • 1 bell pepper, sliced

    • 1 red onion, sliced

    • 1 tbsp olive oil

    • 1 tsp dried oregano

    • Salt and pepper to taste

    • Fresh lemon wedges for serving

Preparation

Directions:

  1. Preheat your oven to 400°F (200°C).

  2. Place the salmon fillets on a baking sheet lined with parchment paper.

  3. Arrange the sliced vegetables around the salmon.

  4. Drizzle everything with olive oil, and sprinkle with oregano, salt, and pepper.

  5. Roast in the oven for 15-20 minutes, until the salmon is cooked through and the vegetables are tender.

  6. Serve with lemon wedges on the side. Enjoy!
