  • 1 large cauliflower, cut into 2-3 thick steaks

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 2 tbsp capers

  • 2 tbsp lemon juice

  • 1/4 cup vegetable broth

  • 1 tbsp fresh parsley, chopped

Preparation

Directions:

  1. Preheat the oven to 400°F (200°C). Place the cauliflower steaks on a baking sheet.

  2. Drizzle with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, flipping halfway through, until golden and tender.

  3. While the cauliflower roasts, prepare the sauce by heating vegetable broth in a small saucepan over medium heat. Add capers and lemon juice.

  4. Simmer for 5 minutes until slightly reduced.

  5. Once the cauliflower steaks are cooked, drizzle with the lemon-caper sauce and sprinkle with fresh parsley. Serve immediately.
