Ingredients:
1 large cauliflower, cut into 2-3 thick steaks
2 tbsp olive oil
Salt and pepper to taste
2 tbsp capers
2 tbsp lemon juice
1/4 cup vegetable broth
1 tbsp fresh parsley, chopped
Preparation
Directions:
Preheat the oven to 400°F (200°C). Place the cauliflower steaks on a baking sheet.
Drizzle with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, flipping halfway through, until golden and tender.
While the cauliflower roasts, prepare the sauce by heating vegetable broth in a small saucepan over medium heat. Add capers and lemon juice.
Simmer for 5 minutes until slightly reduced.
Once the cauliflower steaks are cooked, drizzle with the lemon-caper sauce and sprinkle with fresh parsley. Serve immediately.
