Ingredients:
1 cup quinoa (organic)
1 cucumber, diced
1 red bell pepper, diced
1 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup tahini
2 tbsp lemon juice
1 tbsp olive oil
Salt and pepper to taste
Preparation
Directions:
Rinse quinoa under cold water and cook according to package instructions (about 15 minutes).
While quinoa is cooking, chop the cucumber, bell pepper, tomatoes, and onion.
In a bowl, mix the tahini, lemon juice, olive oil, salt, and pepper until smooth.
Once quinoa is cooked, fluff it with a fork and let it cool slightly.
In a large bowl, combine the quinoa with the chopped veggies and parsley.
Drizzle with the tahini dressing and toss gently.
Serve chilled or at room temperature. Enjoy!
