Ingredients

  • Ingredients:

    • 1 cup quinoa (organic)

    • 1 cucumber, diced

    • 1 red bell pepper, diced

    • 1 cup cherry tomatoes, halved

    • 1/4 red onion, thinly sliced

    • 1/4 cup fresh parsley, chopped

    • 1/4 cup tahini

    • 2 tbsp lemon juice

    • 1 tbsp olive oil

    • Salt and pepper to taste

Preparation

Directions:

  1. Rinse quinoa under cold water and cook according to package instructions (about 15 minutes).

  2. While quinoa is cooking, chop the cucumber, bell pepper, tomatoes, and onion.

  3. In a bowl, mix the tahini, lemon juice, olive oil, salt, and pepper until smooth.

  4. Once quinoa is cooked, fluff it with a fork and let it cool slightly.

  5. In a large bowl, combine the quinoa with the chopped veggies and parsley.

  6. Drizzle with the tahini dressing and toss gently.

  7. Serve chilled or at room temperature. Enjoy!
