Ingredients

  • Ingredients:

    • 2 large sweet potatoes, peeled and diced

    • 1 can chickpeas, drained and rinsed

    • 1 onion, diced

    • 2 cloves garlic, minced

    • 1 can coconut milk (full-fat)

    • 1 tbsp curry powder

    • 1/2 tsp cumin

    • 1 tbsp olive oil

    • Salt to taste

    • Fresh cilantro for garnish

Preparation

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft, about 5 minutes.

  2. Add the sweet potatoes, curry powder, and cumin, stirring to coat.

  3. Pour in the coconut milk and add the chickpeas. Stir well to combine.

  4. Bring to a simmer, cover, and cook for 15-20 minutes, or until the sweet potatoes are tender.

  5. Season with salt to taste.

  6. Garnish with fresh cilantro and serve with rice or bread. Enjoy!
