2 medium zucchinis, spiralized
2 chicken breasts (organic, if possible)
1/4 cup fresh basil leaves
1/4 cup pine nuts (or walnuts)
2 cloves garlic
2 tbsp olive oil (for pesto)
1/4 cup Parmesan cheese (optional, for non-vegan version)
1 tbsp olive oil (for grilling)
Salt and pepper to taste
Preparation
Directions:
Preheat grill or grill pan over medium heat. Season the chicken breasts with olive oil, salt, and pepper.
Grill the chicken for 6-7 minutes on each side, until fully cooked. Set aside and slice thinly.
For the pesto, blend basil, pine nuts, garlic, Parmesan (if using), and olive oil in a food processor or blender until smooth. Season with salt and pepper.
Spiralize the zucchinis into noodles. Heat a non-stick pan over medium heat and sauté the zucchini noodles for 2-3 minutes until tender but still firm.
Toss the zucchini noodles with the pesto and top with grilled chicken slices. Serve immediately.
