Zucchini Noodles with Pesto and Grilled Chicken

Ingredients:

  • 2 medium zucchinis, spiralized

  • 2 chicken breasts (organic, if possible)

  • 1/4 cup fresh basil leaves

  • 1/4 cup pine nuts (or walnuts)

  • 2 cloves garlic

  • 2 tbsp olive oil (for pesto)

  • 1/4 cup Parmesan cheese (optional, for non-vegan version)

  • 1 tbsp olive oil (for grilling)

  • Salt and pepper to taste

Preparation

Directions:

  1. Preheat grill or grill pan over medium heat. Season the chicken breasts with olive oil, salt, and pepper.

  2. Grill the chicken for 6-7 minutes on each side, until fully cooked. Set aside and slice thinly.

  3. For the pesto, blend basil, pine nuts, garlic, Parmesan (if using), and olive oil in a food processor or blender until smooth. Season with salt and pepper.

  4. Spiralize the zucchinis into noodles. Heat a non-stick pan over medium heat and sauté the zucchini noodles for 2-3 minutes until tender but still firm.

  5. Toss the zucchini noodles with the pesto and top with grilled chicken slices. Serve immediately.
